Cathy’s Comments: The scent of fennel is sweet, sharp, peppery-spicy, with a fruity top note, plus that characteristic sweeet licorice aroma. I prefer the fuller scent of the CO2 extract, which is why I offer that rather than the distilled essential oil. It’s often used as a diuretic and lymphatic decongestant, and is considered a warming digestive stimulant.
